docs: stop calling network_mode a Compose network driver - #25855

The default-network section said to see "Network drivers: bridge vs host" for a different driver, but that heading is
network_mode(host/none/service). Split it: custom Compose networks vs the container network stack.@netlify /compose/how-tos/networking/
